Chives (Allium schoenoprasum)with buds are available for only a
short time in the spring. Chives are
usually chopped finely and make a great addition to salads, cottage cheese or
cream cheese, soups, omelettes, and potatoes. Chive buds are edible and have an
intense onion taste. They are good raw, chopped up in salads, or they are also
delicious stir fried with any Asian dishes.
