Using Herbs to Make Simple Syrups

 

A simple syrup is a delicious way to add the flavor of herbs to cocktails and other beverages. To make a simple syrup, stir together in a sauce pan one cup sugar and one cup water. Bring to a boil, stirring occasionally, and boil until all of the sugar is dissolved (which will happen quite quickly). Remove from the heat, add one cup loosely packed herb leaves, and let stand for at least 30 minutes or up to 2 hours. Strain out the leaves, and store the simple syrup in the refrigerator in an airtight container for up to one month.
